What is Panela?

Panela is pure cane juice, that is reduced to a thick consistency by boiling, it is then poured into square molds to set, this unique process gives it a mild caramel like flavour, which makes it the ideal sweetener for foods and drinks alike.

As we use only pure sugar cane, it retains all the natural goodness of vitamins and minerals which is present within the sugarcane, conventional refined sugar, is stripped of all this goodness. So by buying Hasslachers Panela not only are you helping to sustain a fair trade system, your getting one of the most wholesome and healthy sugars in the world.

Our Panela comes from the district of Oritá, who’s principle town is called Mariquita located in the north west of Colombia. The geography of the area is humid tropics and is very montainous, with an abundance of cane plantations and different exotic fruits.

All plantations maintain full Organic status and are regularly inspected and certified by Ecocert Colombia and are 100% free of fertilizer. Ecocert has a partnership with the UK’s Soil Association and a ‘chain of custody’ is strictly maintained. A local family runs the company and provides us the organic sugar cane to produce the actual panela. They supply the organic sugar cane and are paid a premium price above the local market price. This is because Organic production yields about 40% less cane than conventional non-organic production with fertilisers.

The principal nutritional natural components are the sugars (sucrose, glucose and fructose), vitamins (A, B1, B2, B5, B6 complex, C, D and E), and minerals (potassium, calcium, phosphorus, magnesium, iron, copper, zinc and manganese). Vitamins are essential for the normal body functions and development. Since they are not synthesized by the body they must be consumed regularly and in a balanced form. Panela therefore contributes essential vitamins. Minerals play an important role in the building of bones, other tissues and fluids. They activate important enzymatic systems as well as intervene in many metabolic activities, controlling the pH, etc.

Among the carbohydrates in panela, sucrose represents 75% to 85%. Glucose and fructose are between 6 and 15% dry weight and are immediately available to the body, being easily metabolized and transformed into the energy our body needs. Glucose and fructose have a much higher biological value to the body than sucrose, the main component of brown and refined sugar. Interestingly, Panela has 5 times more minerals than brown sugar, making it the ideal alternative natural sweetener to refined sugar.
